Antonia Demas, PhD
Antonia Demas, PhD, is the founder and director of the Food Studies Institute, a non-profit devoted to improving the long-term health and education of children. She has a Ph.D. from Cornell University in education, nutrition, and anthropology. Her award-winning curriculum, Food Is Elementary, has been taught successfully in more than 500 schools in 23 states. Dr. Demas conducts collaborative research studies to document the effects a healthy diet has upon health, academic performance and behavior. She consults throughout the U.S. and abroad and trains and certifies teachers as food educators.
